Cod with bacon and sea aster

4 pieces of cod fillet
4 x 75 grams of sea aster
40 ml of red port
3 cubes of butter
Salt and pepper
2 shallots
250 ml of red wine
4 slices of bacon
2 cubes of butter

For the sauce, fry the shallots in 1/3 of the butter until they look glassy (i.e., somewhat transparent). Add the red wine and let it simmer until the liquid is reduced to 1/3 of its original quantity. Rinse the cod fillets with cold water and dry with paper towels. Wrap the cod fillets in a piece of bacon. Tie with kitchen string and season with salt and pepper. Fry the cod fillets in 1/3 of the butter until they have a golden-brown colour. Put the filets in a pre-heated oven on 180 degrees and cook for approximately 8 minutes. Wash the sea aster and stir-fry in 1/3 of the butter on a high fire. Add the port, salt and pepper to the sauce and add the ice-cold butter right before serving. Make sure the sauce does not come to a boil after you have added the butter! Remove the strings from the cod fillets and serve the fish on top of the sea aster. Pour the sauce around the fish. Serve immediately.
